Rainy Bank Holiday

It rained and rained all day today. I could just imagine all the barbeques across London being called off.

Mr K-E and I stayed in all day trying to sort out our flat. He did more painting, while I did boxing and storing.

To set us up for the busy day - we had a big breakfast. Bacon, Egg and Cheese Muffins, yum yum. If you've only had these at McDonalds, you should really try and make them yourself at home. It's quite labour-intensive, but tastes 100 times better.

Here are the ingredients for a delicious Muffin breakfast.

Cook the bacon. You can either grill or fry or oven-cook like me. I put the bacon in a hot oven on a foil-lined baking sheet and then get on with all the other ingredients. It saves on washing-up (just throw the foil away) and you don't get that lingering bacon smell all over the house.

Split the muffins and toast under the grill. Then put 2 rashers of cooked bacon on one side of the toasted muffin, and place a slice of cheese on top to melt under the grill.



Fry eggs. Sunny side up is best because then you have the yummy runny yolk.

Load it all up. Add ketchup or whatever sauce you fancy.













Make coffee. Breakfast is served.

PS They are English muffins, not the sweet American-type muffins. I suppose you could try it with burger buns but muffins just have that special doughy yumminess.
